Back in the old days, when people did land surveys, They didn't have modern conveniences likes lasers or GPS. They had to rely on the natural markers around them to establish boundaries. If the only thing available at the time was a tree, the surveyor would make a unique mark on the tree and refer to it in his notes. These trees were called Witness Trees and were very important. The Witness Tree in this song is equally important to this man as he describes his love for his woman.
